Sweet & Sour Pork


Sweet and Sour Pork

3 lbs pork, cut in chunks (I used pork chops)
1/2 c. brown sugar
2 Tbsp. cornstarch
2 Tbsp. soy sauce
1/2 c. green pepper strips
2 or 3 tomatoes cut in thin slices
1 can pineapple chunks, drain and save liquid
1/2 c. vinegar
1 tsp salt
1 large onion cut into rings

Simmer meat until tender. Drain pineapple. Make sauce with juice, vinegar, and soy sauce. Pour over meat and simmer 10 minutes. Add green pepper, simmer then add onion, tomatoes, and pineapple. Cook about 3 minutes.  Serve over rice.
