Sweet & Sour Chicken


Sweet & Sour Chicken

6 boneless chicken breast
1 Tbls. oil
1 tsp. chicken bouillon
1/2 c. water
1 1/2 c. pineapple juice
1 Tbls. soy sauce
3/4 c. vinegar
1/4 c. cornstarch
1 c. sugar

Heat oil in skillet and add chicken. Brown on both sides for about 5 minutes. Remove from pan and place in casserole dish.  Then combine chicken bouillon and water in sauce pan.  Bring to boil and stir until bouillon is dissolved.  Add juice, soy sauce and vinegar. Bring to boil. Stir together cornstarch and sugar. Whisk into sauce until smooth.  Cook until mixture boils and thicken. Then pour sauce over chicken.  Cover and bake at 325 degree for 1 hour. Spoon sauce over rice.
