Barbecue Meat


This recipe serves tons of people. My mom makes this for big family meals with 60 people plus some.  On Sunday I wanted to try it so I cut the measurements down. I will put both recipes so if anyone out there is needing to feed tons of people they can use the one that makes tons.  You can also shred the meat up and serve as BBQ beef sandwiches.

Barbecue Meat
10 lbs beef roast
1 lb bacon
2 onions
2 green peppers
2 bouillon cubes
2 bottles barbecue sauce (use 2 different varieties)

Put 1/2 bacon in bottom of roasting pan.  Put in meat and add Lawry salt, garlic salt, and pepper to meat.  Cut up onions and green peppers in large chunks and put over meat.  Pour barbecue sauce over meat and put in bouillon cubes.  Put the other 1/2 bacon on top of meat.  (Add just a little water - I usually rinse out barbecue sauce bottles). Put in oven at 250 degree to 275 degree and cook about 10 hours.

Smaller Version
2 lbs. beef roast
1/2 lb bacon
1 onion
1 green pepper
1 boullion cube
2 -3 c. of barbecue sauce (we only used on kind)

We cooked our in the crockpot on low for 5 to 6 hours.
