Creamy Chicken and Wild Rice


I tried this new recipe. I am wasn't a fan of it but my husband ate it right up and loved it. 

Creamy Chicken and Wild Rice

2 c. chicken broth
1 1/2 c. water
1 cooked, chicken breast shredded
1/4 tsp. salt
1/4 tsp. pepper
1/4 c. flour
1/4 c. butter
1/ 4 c. heavy whipping cream
2 carrots chopped
2 celery stocks chopped
4 stalks of green onions chopped
1 package of Riceroni "Long Grain and Wild Rice"

In a large pot over medium heat, combine broth and water. Bring to boiling, then stir in rice, reserving the seasoning packet for later. Cover, reduce heat, and simmer for 20 mins. Meanwhile chop the veggies. Next in a small bowl combine the salt, pepper, and flour.  In a medium saucepan over medium heat, melt butter. Stir in the seasoning packet until mixture is bubbly. Reduce heat to low, then stir in flour mixture to form a roux.  Whisk in cream a little at a time, until smooth. Cook until thickened. Stir cream mixture into broth and rice.  Add veggies and cooked chicken. Cook over medium heat until heated though, 10-15 minutes, or until vegetables are cooked.
