Broccoli Soup


Don't you just love it when you fix a meal and you go to sit down with the family to eat it and your kids take one look at it and say yucky I don't want to eat it. Well, this happened with this meal. It's wasn't yucky, it was really quite good. I think it was the broccoli that got them for this meal. Hopefully your kids will like it a lot more than mine did. Good Luck :)

Broccoli Cheese Chowder

2 bunches (about 1 pound) fresh broccoli
1 onion, chopped
1/4 c. butter
1/2 c. butter
1/2 c. flour
4 c. milk
1 c. chicken broth
1 1/2 tsp. salt
2 c. grated cheddar cheese

Cook broccoli just until tender. Do not overcook. Drain and cut into small pieces; set aside. Saute chopped onion in the 1/4 c. butter until tender; set aside. In a large saucepan prepare white sauce: melt the 1/2 c. butter over medium heat, then stir in flour until well blended. Gradually stir in milk, chicken broth and salt. Stir constantly until mixture reaches a boil. Cook 1 or 2 minutes until thickened. Add broccoli and onion, Stir in cheese. Cook briefly over medium heat. Avoid bringing to boil.
