Sugar Cookies

I know you are seeing this post and going what why pumpkin cookies when Christmas season is upon us. Well I made these cookies at Halloween and I am just now getting around to blogging about them. You can make them into any shape you want. So candy canes for Christmas, hearts for Valentines day, Eggs for Easter you name it you can use it for that special hoilday.

Sugar Cookies

1/2 c. butter melted
3/4 c. sugar
2 eggs
1/2 tsp. lemon extract
2 c. flour
1/4 tsp. soda
1/2 tsp. nutmeg
1/2 tsp. salt
1/4 c. buttermilk

0r if you don't have buttermilk

1/4 c. milk
1 tsp. vinegar
(mix together to make buttermilk)

Melt butter and add sugar and mix. Then add eggs and mix. Then add lemon extract and mix. Then add buttermilk and mix. Then add all dry ingredients flour, soda, nutmeg, salt and mix together.

You might want to add some more flour, to make it not be so sticky. Then coat counter top with some flour and then put dough on counter top over flour. You might need to knead some more flour into it to get it the right consistency. You don't want it to sticky or to much flour to make it dry but just in the middle of these two.

Roll out dough to be 1/4 inch thick. Then cut shapes out and put shapes on cookie sheet. Bake at 375 degrees for 6 to 8 minutes. Each oven is different I have found that with my oven the prefect time is 8 minutes. (You don't want to cook them long because then they will be dry and to short will be doughy)

One bach make's about 40 cookies.

Frosting
1/2 cube butter melted
1/2 lbs. powder sugar
5 tsp. milk
1 tsp. vanilla

Melt butter, then add powder sugar, milk and vanilla. If the frosting is to thick then add a little more milk, if it is to thin then add more powder sugar. After you have the right consistency then you can add the dye to make it the color you want.
