My good good friend Camille gave me this recipe. And it's even a crock-pot recipe :)
Chicken Tomato Noodle Soup
1 lb. chicken cut into 1 inch cubs
2 medium stalk celery, sliced
1 large carrot chopped
1 medium onion chopped
2 can of diced tomatoes (do not drain)
2 can of chicken broth (14 oz each can)
or just use 28 oz of water with chicken bouillon cubes mixed together
1 tsp. dried Thyme leaves
1 c. frozen green peas
1 c. frozen home style egg noodles
or make your own homemade (see here)
Cook Chicken in skillet about 5 minutes or until brown. Then in crock-pot add chicken, celery, carrot, onion, tomatoes, broth and thyme. Cover and cook on low for 5 hours. About 15 minutes before serving add egg noodles and peas.
