Fried Chicken with Country Gravy


I tried this new recipe the other day and it was really good. It thought it tasted like fried chicken. Give this one a try for Sunday dinner. I promise you will not be disappointed.

Fried Chicken

3 chicken breasts
3/4 c flour and a dash of salt
1 c. Italian bread crumbs
2 Tblsp. Olive Oil
1 c. chicken broth

Gravy
3 packets of Country Gravy Mix
2 c. milk
1 c. water
drippings from pan

Cut each chicken breast in half. And then place the chicken in a gallon sized freezer zip lock bag. Pound the chicken out flat with a meat mallet. Then in two different plates put on one plate the Italian crumbs, and the other plate the flour. And then in a bowl put the milk.

Heat the olive oil in a skillet. Then put the chicken in the flour coating both sides, then dip chicken in the milk and then put in Italian bread crumbs and coat both sides. And then add to skillet. Repeat process with each piece of chicken.

Cook the chicken in the skillet for 7 minutes on one side then turn and cook on the other side for 7 more minutes. Then add your chicken broth to the skillet and cover and cook for about 5 more minutes or until your chicken is no longer pink in the middle.

Remove chicken from skillet and put on a plate to serve. Don't get rid of the left over juice from the skillet, it needs to be added to your gravy mixture.

With the gravy add the packets, water, milk and dipping from the pan in a medium size pot. Bring to a boil. Once it becomes thick it is ready to serve.

Serve with mash potatoes.
