Southwest Chicken Skillet

Southwest Chicken Skillet
1 tbls Olive Oil
1 lbs. Chicken cut into 1 inch pieces
1 red pepper chopped
broccoli
1/2 onions chopped
mushrooms (optional)
1 can of black beans rinsed & drained
1 cup of salsa
1 flour tortilla cut into 2x1 inch pieces and cook in oven to make crisp
1 c. grated cheddar cheese


Heat oil in skillet and add cut up chicken cook until chicken is done. Stirring occasionally. Stir in vegetables, beans, and salsa. Cover and cook 6-8 minutes. Stirring occasionally until vegetables are crisp and tender. Sprinkle with tortilla and cheese. Cover and cook until cheese is melted.


Tortilla
Cut into pieces and put on baking sheet and bake in oven at 425 degrees for 4-7 minutes or until crisp.
