I got this recipe from my wonderful friend Karen. It's super easy and if your looking for a change of food taste this is your meal. Our name for this meal is Chicken Curry in Hurry!! I love to say that!!
Creamy Chicken Curry
1 1/2 Tbl Veg Oil
1 med onion diced
1/4 tsp salt
2 tsp. curry powder
1 can unsweetened coconut milk
1 can diced tomato
2 Tbl. tomato paste
1 pound chicken cubed
3 c. packed baby spinach
Cook chicken in separate pan. In another pan cook with veg. oil, onion 1/4 salt cook until soft. Add curry powder. Cook for 1 minute. Stir in coconut milk, tomato and paste. Cook until sauce thickens (5 minutes). Add cooked chicken and cook for 3 minutes more. Add spinach and cook until wilted about (3 minutes). Add more salt to taste. Serve over rice.

Sounds delicious. I love curry so I'm definitely going to have to try this one.
