Cheddar Bacon Mashed Potatoes


I have such a wonderful husband. Every Sunday he fixes Sunday dinner for me and the kids. This Sunday he wanted to make something a little different then just mash potatoes and gravy. So he made these potatoes and they were good.

Cheddar Bacon Mashed Potatoes

5 potatoes
1/4 c. milk
1 c. sour cream
1 c. shredded cheddar cheese
5 slices bacon, cooked and crumbled
1 tsp. salt
1/8 tsp. pepper
paprika

Scrub and quarter potatoes. Place in large saucepan filled with 2 inches of water. Bring to boil on high heat. Reduce heat and cover. Cook for 20 minutes or until tender when pierced with a fork. Drain and mash. Add milk, and mash until creamy. Stir in sour cream. Add cheese, bacon, salt and pepper. Place in lightly greased casserole dish. Sprinkle paprika on top. Bake at 400 degrees, uncovered, for 15 minutes.
