Sweet & Sour Pork
2 lbs boneless pork loin
1 tbls. oil
1 1/2 c. water
2 c. pineapple chunks
1/2 c. brown sugar
4 tbls. cornstarch
3 tbls. soy sauce
1/3 c. vinegar
1/2 tsp. salt
1/8 tsp. pepper
1 carrot, chopped
1/2 c. green pepper, chopped
3 green onions, sliced
Cut pork in 1-inch cubes. Heat oil in large skillet. Add pork and stir-fry on medium high 5-6 minutes, stirring constantly until pork is no longer pink. Add water and bring to boil. Lower heat to medium-low, cover and simmer for 30 minutes. Drain pineapple, reserving syrup. Combine sugar and cornstarch. Stir in pineapple syrup, vinegar, soy sauce, salt & pepper. Add to pork and stir until sauce thickens and boil. Add pineapple and vegetables and cook 3 to 4 minutes. Serve over rice.
I didn't have a green pepper and instead of using green onions I used yellow onions. And also I didn't have boneless pork loin so I used pork chop that were cut up. By doing all of this it still worked out.
