This recipe comes from my husband grandma. I try and make it like her but it never taste quite like hers. So when we go to her house and stay I always request that she makes this meal for us. I think it just taste better because I didn't have to fix it. And don't we all love when that happens.
Oven Fried Chicken
2 eggs beaten
1/2 cube butter, melted
4-6 chicken breast
Saltine crackers crumbs
water
Dip the skinned chicken in the egg, then roll in the crumbs. Put in a dripper pan and drizzle the melted butter over the chicken pieces. Put in oven at 375 degrees for about 15 minutes, uncovered, to brown slightly. then add about 1/4 cup of water. Cover and bake 1 hour. Makes very tender, not greasy chicken.
