This recipe comes from my wonderful sister Sharon. She made this for me about 6 years ago. And I feel in love with it. I think my husband loves it more than I do. He begs for me to make it all the time. I don't make it that often because it seems to take a lot of effort. When I go to Utah to visit family and he has to stay home alone here to work this is what he fixes for dinner for himself, along with Taco which I don't care for very much. Try this recipe and let me know what you think.
Chicken BLT Salad
6 c. lettuce
1 1/2 c. cooked chicken chopped
2 1/2 c. uncooked bow tie pasta
6 c. lettuce
1 1/2 c. cooked chicken chopped
2 1/2 c. uncooked bow tie pasta
4 strips cooked bacon crumbled
1 tomato
Dressing:
2/3 c. Mayonnaise
3 tsp. White Vinegar
1/2 c. water
2 Tbsp. BBQ sauce
1/2 tsp. pepper
1/4 tsp. salt
Boil pasta until tender. Rinse with cold water and drain. Combine chopped lettuce, chicken, pasta, bacon, and diced tomato. Mix dressing ingredients together. Pour on salad right before serving.
