Cheesy Garlic and Chive Potatoes



Cheesy Garlic and Chive Potatoes

2 pounds baking potatoes
1 1/2 c. sour cream
1/4 c. freshly chopped chives
3 cloves garlic, pressed
2 Tbls. grated onion
1 1/2 tsp. salt
1/4 tsp. pepper
1 1/4 c. cheddar cheese, divided
1 1/4 c. Swiss cheese, divided

Cook potatoes in oven at 425 after you have washed and pierced with a fork a few times. Cook in oven for 1 hour. Remove from oven and cool completely.  Then turn down heat to 350 degrees. Grated potatoes with skins on. Combine in a bowl sour cream, chives, garlic, onion, salt and pepper.  Add potatoes and gently toss to combine.  Add 1 cup of cheddar cheese and 1 cup of Swiss Cheese fold in to combine.  Place mixture in a baking dish 8x8. Sprinkle remaining cheese.  Bake 30-40 minutes.  Cool 10 minutes before serving.
