Cream of Chicken and Veggie Soup


This is super delicious!  


Cream of Chicken and Veggie Soup

1 Tbsp. olive oil
1 Tbsp. butter
1 yellow onion, diced
4 large carrot, diced
4 stalks celery, diced
1 or 2 cloves garlic, finely chopped
4-6 c. chicken broth or stock
1/2 c. butter
10 Tbsp. flour
1 c. cream or half and half 

Heat olive oil & butter in pan.  Saute onions, carrots, celery and garlic until tender.  Add 4-6 c. chicken broth. Simmer for 20 minutes covered. In separate pan make a roux bu melting 1/2 c. butter, flour cook until pasty.  Add cream and whisk until combined.  Then pour sauce into soup whisk and let thicken.
