Carmelized Butternut Squash


Caramelized Butternut Squash

1 squash
3 Tbsp. butter, melted
2-3 Tbsp. brown sugar
1/2 tsp. salt
1/4 tsp. pepper

Preheat oven to 400 degrees. Cut off end of squash and discard. Peel squash, cut them in half lengthwise and remove seeds. Cut squash 1 1/4 inch cubes and place on baking sheet.  Mix together butter, brown sugar, salt & pepper.  Pour mixture over squash and with hands coat squash with mixture evenly. Roast 35-40 minutes until tender and glaze caramelized. Turn often while cooking with spatula.

*I had 3 squash I cooked with this recipe and so I doubled sauce mixture but you don't need to double sauce if you have more than 1 sqaush.
