Greek Lemon Chicken Soup


Greek Lemon Chicken Soup

2 c. chopped cooked chicken
3 medium carrots, coarsely chopped
1 c. chopped onions
1/2 c. juice from lemons
zest from 2 lemons
2 garlic cloves
2 can of cream of chicken soup
6 cans of chicken broth
1/2 tsp. black pepper
1 1/3 c. uncooked, long-grained white rice

Lightly spray cooking pot with cooking spray. Add carrots, onions and cook until tender add garlic and let cook for 2 more minutes.  Stir in chicken, lemon zest, lemon juice, soup, chicken broth and black pepper. Bring to boil. Stir in rice; reduce heat. Cover; simmer over low heat 15-20 minutes or until rice is tender.  Remove from heat.
