Oven-Fried Chicken


Oven-Fried Chicken

2 tbsp. butter, melted
2 eggs, beaten
2 Tbps. milk
1/2 c. corn meal
1/2 c. flour
1 1/2 tsp. salt
1 1/4 tsp. paprika
3/4 tsp. garlic powder
3/4 tsp. black pepper
2 1/2 to 3 lbs. chicken

Combine eggs and milk in medium bowl. Combine corn meal, flour, salt, paprika, garlic powder and pepper in separate medium bowl. Dip chicken pieces in egg mixture, coating both sides, then into corn meal mixture. With a 9x13 baking dish, place melted butter in the dish, make sure the bottom of dish is coated in butter,  then place chicken into the dish.

Brush chicken once during baking with juices from pan.  Cook at 400 degrees for 45 to 50 minutes or until chicken is no longer pink in center.
