Beef and Snow Peas


Beef and Snow Peas

1/3 c. soy sauce
1 c. chicken broth
2 cloves garlic, minced
1 lb. boneless beef sirloin steak 
   (cut into 1/8 inch strips)
1 tsp. cornstarch
2 c. snow peas
4 tsp. canola oil, divided

In small bowl, combine soy sauce, broth and garlic. Set aside 1/4 c.   Place beef in plastic zip-top bag; add remaining soy sauce mixture, seal and squeeze the bag to mix the beef in marinade. Refrigerate at least 1 hour. In small bowl, stir cornstarch and reserve soy sauce mixture until smooth; set aside. In a nonstick skillet, stir fray snow peas in 2 tsp. hot oil for 3-4 minutes. Remove and keep warm. Drain and discard marinade from beef. In same skillet, stir-fry beef in remaining oil for 2 minutes or until done. Add the snow peas back in. Add cornstarch mixture to skillet. Bring to boil and cook for 1-2 minutes or until thickened.  Serve over rice.
