Hot Fudge Pudding Cake


My dear friend Katie came to visit me a few weeks ago. It was fun to have her here. A few days later after she left, I received a package in the mail from her. Can you guess what it was?? It was a cook book of all her family recipes that they had been put together by her Sister in Law Liz. I was so excited!! Tons of new recipes to try. I was looking through it and could hardly contain myself. I felt like it was Christmas morning. I keep telling my husband "I am so excited, I am so excited, oh look at this recipe, oh I am so excited!!!" I think he knew I was excited.

Anyways, this is a recipe from this great new book. It tasted divine, warm melt in your mouth dessert.

Hot Fudge Pudding Cake

3/4 c. sugar
1 c. flour
3 Tbsp. cocoa
2 Tbsp. baking powder
1/4 tsp salt
1/2 c. milk
1/3 c. melted butter
1/2 tsp. vanilla
1/2 c. sugar
1/2 c. brown sugar
4 Tbsp. cocoa
1 1/4 c. hot water

Heat oven to 350 degrees. In medium mixing bowl combine sugar, flour, cocoa, baking powder and salt. Blend in milk, melted butter and vanilla. Beat until smooth. Pour in a 9x9 pan. In a small bowl combine sugar, brown sugar, and cocoa. Sprinkle all the mixture evenly over brownie mix. Pour hot water over the top - DO NOT STIR - Bake for 40 minutes or until center is almost set. Let stand for 15 minutes for serving. Spoon into dessert dishes, spooning sauce from the bottom of the pan over the top. Serve with whipped cream or ice cream.

  2. I'm so glad that you like the book! I had a great time visiting you guys! This is one of my all time favorite cakes. We would make it for people in Brazil all the time, and it got the nickname of "Funny Cake" because it baked in such an odd way. YUM! I think I need to make myself some of this!
