Chicken Taquitos

Chicken Taquitos

6 flour tortillas
2 c. shredded cooked chicken
1 package of taco seasoning
1/2 c. water
1/4 c. onion chopped
4 oz can green chilies, chopped
1 c. tomatoes chopped
guacamole
sour cream
salsa

Combine chicken, taco seasoning, water, onions and chilies in saucepan. Cook until heated through. Stir in tomatoes. Place chicken mixture down center of each tortilla. Roll up tightly. Secure with toothpick. Pour 1/2 inch of oil in large skillet and heat until a drop of water sizzles. Place rolled tortillas in hot oil and fry until golden brown. Turn and brown other side. Drain well on paper towels. Serve with guacamole, sour cream and salsa.

*For healthier version, place tortillas on a baking stone and bake until crisp, about 15 minutes.
