Beef Quesadillas



These were really tasty. This is another give away recipe from my friend Sarah. They were a huge hit with my husband.

Beef Quesadillas

1 lb. Ground beef
1/2 c. Refried beans
1 can (4 oz.) Green chilies drained
1/2 tsp. Oregano
1/2 tsp. Cumin
1/4 tsp. Salt
4 flour tortillas
2 Tbsp. Melted butter
1 1/3 c. shredded cheese
Paprika

Cook beef until no longer pink and drain
Stir in the beans. Chilies, oregano, cumin and salt
Cook over med heat 3 to 4 min until heated through
Brush one side of each tortilla with butter
Spoon 1/2 c meat mixture over half of the unbuttered side of the tortilla
Sprinkle with cheese
Fold in half and place on lightly greased cookie sheet
Sprinkle top with paprika
Repeat with remaining tortillas
Bake for 10 min or until crisp and golden brown at 475*

(Watch them close they can start to burn easy)

Cut into wedges
Top with sour cream, salsa, avacado, olives, cheese or any taco toppings you like

  1. Hey Suzette! I am so glad I know you love cooking!! I LOVE it, though I am not very good....I tried these tonight. I didn't have refried beans, so I substituted black beans instead. It was pretty good actually! Thanks for the posts, I am excited to copy you! :)
