Give Away

Yes you read that right. I am doing a give away. The person whose name is drawn out will win these clothes below from Coldwater Creek. How do you win these clothes? It is as simple as this....

1. I have kind of been stuck in a funk lately if you can't tell with just chicken recipes. The reason is I do not have too many ground beef recipes. So comment and leave me a recipe for ground beef and your name will be entered to win.

2. Its summer time around here, and I sure hate to heat up the house by cooking something in the oven. I am looking for simple crock-pot recipes. Any kind of meat or recipe will work. Leave a comment for a recipe that goes in the crock-pot and your name will be entered to win.


I will give all the recipes a try and you will be featured on this blog.

  2. Chili verde
    1 cooked shredded pork roast (I cook it in the crock pot the day b4)
    2 small cans green chilies
    2 cans diced tomatoes-drained
    1 can black beans-drained
    1 can pinto beans
    1 can kidney beans
    1/2 bunch cilantro
    1 Tbsp. Chili powder
    1 Tbsp. Oregano
    1 tsp. Cumin
    1 tsp. Garlic powder
    Fritos
    Limes
    Taco toppings

    Put everything in crockpot and cook for 6 hrs on low serve over fritos. Top with taco toppings and squeeze lime over the top

  3. Beef quesadillas
    1 lb. Ground beef
    1/2 c. Refried beans
    1 can (4 oz.) Green chilies drained
    1/2 tsp. Oregano
    1/2 tsp. Cumin
    1/4 tsp. Salt
    4 flour tortillas
    2 Tbsp. Melted butter
    1 1/3 c. shredded cheese
    Paprika

    Cook beef until no longer pink and drain
    Stir in the beans. Chilies.oregano.cumin and salt
    Cook over med heat 3 to 4 min until heated through
    Brush one side of each tortilla with butter
    Spoon 1/2 c meat mixture over half of the unbuttered side of the tortilla
    Sprinkle with cheese
    Fold in half and place on lightly greased cookie sheet
    Sprinkle top with paprika
    Repeat with remianing tortillas
    Bake for 10 min or until crisp and golden brown at 475*
    (Watch them close they can start to burn easy)
    Cut into wedges
    Top with sour cream, salsa, avacado, olives, cheese or any taco toppings you like

  4. Crock Pot Salsa Chicken

    *2-3 Chicken breasts
    *1 jar of salsa (pick your favorite, I really like it with green salsa)
    *1 can black beans
    *1 1 cup frozen corn
    *1/3 cup sour cream (I use fat free, and it comes out fine)
    *cooked rice

    Pour a small ammount of salsa in the bottom of the crockpot. Place the chicken on top, and pour the rest of the salsa on top. Replace the lid. Cook on medium for 6-8 hours, or high for 4-5.

    About 1/2 an hour before you are ready to eat, use two forks to shred chicken. Add the blackbeans (drained) and the corn. Allow all ingredients to warm.

    Right before serving mix in sour cream. Serve over rice.

    Super easy, and tasty! I'll be back with a ground beef recipe soon!

  5. Slow-Cooker Chicken Curry- Yum Yum!

    10 chicken thighs (2-3/4 lb.), skins removed
    1 jar (16 oz.) Salsa
    1 onion, chopped
    2 Tbsp. curry powder
    1 cup Fat Free Sour Cream

    PLACE chicken in slow cooker. Combine next 3 ingredients; pour over chicken. Cover with lid.

    COOK on LOW 8 to 10 hours (or on HIGH 5 hours).

    REMOVE chicken to serving platter; cover to keep warm. Add sour cream to slow cooker; stir until well blended. Serve over chicken.

    Can be served with Rice or Veggies, or both! Super Yummy!

  6. All right, I have posted 1 crock pot recipe, and I wrote about your blog on my blog, and now I am ready to give you a ground beef recipe to make it three entries in your giveaway (These clothes are adorable! Pick me!)

    This recipe is my very favorite that I have tried for sloppy joes. I like the texture, and the taste is right on (in my opinion, but I know that everyone likes their SJ's a little different) This recipe is one from my SIL Liz.

    Sloppy Joes

    1 lb (or more) ground beef
    1 can Campbell's Chicken Gumbo Soup
    1 can Tomato Soup
    1 TBLS white vinager
    1 TBLS brown Sugar
    1 Squirt Ketchup

    Brown hamburger and drain grease. Add the rest of the ingredients and let simmer 10-15 minutes. Adjust ingerdients to taste. Serve on your favorite buns.

    *It can be hard to find the chicken cumbo soup, but Wal Mart does carry it in most places.

    Cabbage Rolls (John and I like these but the kids call them "bloody hearts" and would rather go to bed hungry :)

    Ingredients

    12 leaves cabbage
    1 cup cooked white rice
    1 egg, beaten
    1/4 cup milk
    1/4 cup minced onion
    1 pound extra-lean ground beef
    1 1/4 teaspoons salt
    1 1/4 teaspoons ground black pepper
    1 (8 ounce) can tomato sauce
    1 tablespoon brown sugar
    1 tablespoon lemon juice
    1 teaspoon Worcestershire sauce

    Directions

    Bring a large pot of water to a boil. Boil cabbage leaves 2 minutes; drain.
    In large bowl, combine 1 cup cooked rice, egg, milk, onion, ground beef, salt, and pepper. Place about 1/4 cup of meat mixture in center of each cabbage leaf, and roll up, tucking in ends. Place rolls in slow cooker.
    In a small bowl, mix together tomato sauce, brown sugar, lemon juice, and Worcestershire sauce. Pour over cabbage rolls.
    Cover, and cook on Low 8 to 9 hours.

  9. Loaded Twice-Baked Potatoes (with ground beef)

    Ingredients
    4 medium russet potatoes
    8 ounces 90%-lean ground beef
    1 cup broccoli florets, finely chopped
    1 cup water
    1 cup shredded reduced-fat Cheddar cheese, divided
    1/2 cup reduced-fat sour cream
    1/2 teaspoon salt
    1/4 teaspoon freshly ground pepper
    3 scallions, sliced


    Preparation
    1.Pierce potatoes all over with a fork. Place in the microwave and cook on Medium, turning once or twice, until the potatoes are soft, about 20 minutes. (Or use the “potato setting” on your microwave and cook according to the manufacturer’s directions.)
    2.Meanwhile, brown meat in a large skillet over medium-high heat, stirring often, about 3 minutes. Transfer to a large bowl. Increase heat to high, add broccoli and water to the pan, cover, and cook until tender, 4 to 5 minutes. Drain the broccoli; add to the meat.
    3.Carefully cut off the top third of the cooked potatoes; reserve the tops for another use. Scoop out the insides into a medium bowl. Place the potato shells in a small baking dish. Add 1/2 cup Cheddar, sour cream, salt and pepper to the potato insides and mash with a fork or potato masher. Add scallions and the potato mixture to the broccoli and meat; stir to combine.
    4.Evenly divide the potato mixture among the potato shells and top with the remaining 1/2 cup cheese. Microwave on High until the filling is hot and the cheese is melted, 2 to 4 minutes.

  10. I love this one!! It is soooo easy! It comes from Mel's Kitchen Cafe:
    6 fresh or frozen chicken breasts
    1 (20-ounce) can crushed pineapple, drained
    1 (15-ounce) can black beans, rinsed and drained
    1 (15-ounce) can white beans, like Great Northern, rinsed and drained
    2 cups mild or medium salsa

    Tortillas or tortilla chips and garnishes, like sour cream, cheese, tomatoes, lettuce, etc.

    Place the chicken in the crock pot and add the rest of the ingredients. Cook on low for 6 to 8 hours. Using tongs, remove the chicken to a cutting board and shred into bite-size pieces. Mix the chicken back in with the rest of the ingredients. The mixture will be fairly soupy – I like to drain off some of the excess liquid before serving, especially if we are eating it in tortillas, so it doesn’t make everything soggy. Serve with tortilla chips and garnishes, like tomatoes, cheese, avocado, sour cream, etc.
