The other night we need a change for dinner instead of the same old same old. You know we all get in funks with cooking and it seems like I am in one right now. So we need something that was different but good at the same time. We decided to make Navajo taco's. I have never made these before. I think they turned out ok. And it was a nice to have a different change for dinner.
Scones
2 Tbls. Yeast
3 Tbls. Sugar
1 tsp. salt
2 1/2 c. milk
3 Tbls. shortening
2 eggs
5 to 6 c. flour
oil
Mix yeast, sugar, and salt. Scald milk and shortening and cool until warm to touch. In a bowl beat eggs. Add milk and yeast mixture. Add 3 cups flour and mix well. Add rest of flour and knead 5 minutes. Let rise 1 hour. Roll 1/4-inch thick and cut in squares. Heat 1/2 inch oil in large skillet over medium-high heat. Carefully place dough in hot oil and cook for 2 or 3 minutes until golden brown. With tongs, turn scone over and cook on other side. Lower heat if they are brown before center is done.
*For Healthier version, spray with cooking spray and bake at 400 degree for 10 to 15 minutes. I do this instead of the oil.
Navajo Taco
1 recipe of scones
2 can chili
shredded cheddar cheese
shredded lettuce
sliced olives
chopped green onions
chopped tomatoes
salsa
sour cream
Prepare scones as directed. Heat chili. Spoon chili on top of scones. Top with remaining ingredients, as desired.
I love these things. Sometimes I just need some grease, and I feel better knowing I am having salad with it. :) You can also do pizza-themed scones, instead of Mexican. I do like the Mexican ones better.
