Funeral Potatoes & Ham


So I know you have looked at the title of this post and said "what are funeral potatoes?". Well they are potatoes that are served at a funeral after someone dies in my church. After they have the grave side service, then the family goes back to the church and then we feed them this meal. I know we are crazy! But what a better name for them then Funeral Potatoes. They are very good. And yes you can make them and feed them to your family even if there hasn't been a death in the family.

Funeral Potatoes
6 med-large potatoes, boiled , peeled & shredded. (Or go the easier route and buy some frozen shredded potatoes in the freezer section at Walmart).
1/4 c. margarine
1 pt. sour cream
1 can of cream of chicken soup
2 c. grated shredded cheddar cheese
1/2 c. green onions chopped (I use 1/4 c. dried onions)
1 c. cornflakes, crushed
2 T. margarine melted

Melt margarine, Add soup, sour cream, and cheese. Heat and stir over medium heat until cheese melts. Add onions. Stir in potatoes. Put in 9x 13 inch pan. Top with cornflakes and drizzle margarine over the top of cornflakes. Bake covered at 350 degree's for 30 minutes. Serves 12-15 people.


Ham with Sauce

1 (4-pound) precooked, sliced ham
1 c. packed brown sugar
1 c. apricot jam
1/2. c Worcestershire sauce

Combine brown sugar, apricot jam, worcestershire sauce in a small pan. Mix and heat until boiling. Pour over ham and put in oven. Cover and cook 325 degrees for 30 minutes. Spoon sauce over ham when serving.

  2. That glaze sounds good. Pulling the ham out of the freezer today. Yum. Thanks for sharing, and I'm glad you didn't die on your airplane ride. :)
