My friend Kara gave me this recipe for this dish. It really is good. And it seems like all I blog about is chicken. I promise I do cook with other meats. It just seems like recently it has been chicken. I will try and branch out and cook with other meats this week.
Chicken Dish
1 or 2 chicken breast cooked and chopped
2 cups rice
2 cups water
1 Tbls butter
1 Tbls dried parsley
2 can of cream of chicken
1 1/2 c. sour cream
1 can of corn
2 c. Ritz crackers
1 Tbls poppy seeds
1/4 c. butter
Combine water and rice and cook in microwave until rice is cook. After it is cooked put 1 tbls melted butter and parsley in with rice and mix together. Mix in another bowl cream of chicken and sour cream together. Crush the Ritz crackers to make 2 cups and then mix 1/4 c. butter and poppy seeds with crushed crackers. Then in 9x13 pan layer rice, chicken, corn, and then pour sauce over it and top with crushed Ritz mixture. Bake uncovered, 30 minutes at 350 degree's. Can be made ahead and baked that day or frozen, cooked or uncooked.
