Chicken and Wild Rice Soup


This recipe comes from my friend Becky. It was really delicious!!  We had it for dinner last night.

Chicken and Wild Rice Soup

4 c. chicken broth
2 c. water
1 1/2 c. cooked chicken, cubed
1 (4.5 oz) package of quick cooking long grain and wild rice (farmhouse brand)
1/2 tsp. salt
1/2 tsp. pepper
3/4 c. flour
1/2 c. butter
2 c. milk or heavy cream
1 c. carrots, peeled & diced
1/2 c. onion
1 c. celery, chopped
1 1/2 c. frozen peas

In large pot over medium heat, combine broth, water, chicken, rice  (reserve your seasoning packet for later), carrots, onions, and celery. Cook until vegetables are at desire tenderness. Meanwhile in a medium saucepan over medium heat, melt butter. Remove from heat and add seasoning packet, flour, salt and pepper and stir until combined. Return to heat and add milk, a little at a time until all is added and mixture is smooth.  Cook until thickened, about 5 minutes. Add milk mixture and peas to soup. Cook over medium heat until everything is combined well (maybe 10 minutes).
