Chicken Cacciatore


This comes from my friend Emily who is an amazing cook!

Chicken Cacciatore
1/4 c. olive oil
8-10 chicken breast tenders
1 onion, diced
1 clove garlic
1/2 c. mushroom, sliced
1 (6 oz.) can tomato paste
2 c. hot water
1 bay leaf, crumbled
1/4 tsp. allspice
1/2 tsp. salt

Brown chicken in oil. Add onion, garlic, and mushrooms. Saute until tender. Combine water, tomato paste, and spices. Pour over chicken and vegetables. Cover and simmer for 30 minutes. Remove lid and continue cooking until sauces thickens, about 20 minutes. Serve over spaghetti.
