Lemon Fried Rice


Lemon Fried Rice

1/4 c. butter
1 carrot, chopped
1/2 onion, chopped
3 Tbls parsley
4 c. cooked rice
2 Tbls. soy sauce
2 tsp. grated lemon peel
1/2 tsp. salt
1/8 tsp. pepper

Melt butter in large skillet. Stir-fry carrot, onions and parsley for 3 to 4 minutes until carrot is crisp-tender. Add remaining ingredients and stir-fry for another 2 to 3 minutes until rice is heated through.
