Crock-pot Salsa Chicken


This is another give away recipe that I tried and it comes from my friend Katie. It's kind of similar to the other chicken salsa, chicken tacos, chicken tortilla recipe that I have posted recently all from the give away. It was good and had it's own different flavor.

Crock Pot Salsa Chicken


2-3 Chicken breasts
1 jar of salsa (pick your favorite, I really like it with green salsa)
1 can black beans
1 cup frozen corn
1/3 cup sour cream
cooked rice

Pour a small amount of salsa in the bottom of the crockpot. Place the chicken on top, and pour the rest of the salsa on top. Replace the lid. Cook on medium for 6-8 hours, or high for 4-5.

About 1/2 an hour before you are ready to eat, use two forks to shred chicken. Add the black beans (drained) and the corn. Allow all ingredients to warm.

Right before serving mix in sour cream. Serve over rice.
