BBQ Chicken & Potatoes


It's summer time, and don't we all love to grill. I know we do, because summer isn't very long her where we live. Here is a recipe for some really really good marinated chicken. This recipe comes from my friend Lynette. She had us over for dinner once and served us this chicken. And I knew I had to have the recipe of this chicken was. And this recipe for potatoes was super easy. I do have to to admit that we only have a very very small BBQ grill. So between the whole meal that you see above it took us 1 hour and 20 minutes to cook it all. Because we had to cook it a little at time. And we also cook the corn on the grill too.

Grilled Potatoes
3 potatoes cut 1/4 inch thick long ways
5 Tbls. Olive Oil
1 tsp. Montreal Steak Seasoning
Salt and Pepper

In bowl combine oil, seasoings. Then slice potatoes up. Put in bowl with oil. And mix around with yours hand until potatoes are coated in oil and seasonings. Cook on grill for 7 minutes on each side. You can serve with BBQ sauce.


Marinated Chicken

3/4 c. Soy Sauce
1/2 c. & 1 Tbls. Honey
1/8 c. & 1 Tbls. White Vinger
1 1/2 Tbls. Garlic Salt
1 1/2 Tbls. Ginger Powder
1/4 c. Minced Onions
1 3/4 c. Oil

4 chicken breast

Mix all together and then add chicken. Cover and set in fridge and marinade for 2 days. I usually don't marinade it for that long. This time I made the sauce at noon and we cooked the chicken at 7 that night.
