Teriyaki & Rice

Tonight I tried a new recipe that failed that last time I made it and it tasted way better this time. Don't they say second times a charm. Oh wait that is third times a charm. Last time it called for 4 cups of rice and it was way to much rice so I cut it down to two cups. I made Chicken Teriyaki and Ham Fried Rice.

Chicken Teriyaki
6 Boneless Chicken Breast (I used only 3)
Teriyaki Sauce

Cut chicken in bite size pieces. In skillet, melt 2 Tbls of butter. Add chicken and cook about 8 minutes or until meat is no longer pink in the center. Sprinkle with teriyaki sauce and cook for 2 minutes.


Ham Fried Rice

1 tbls butter
1/4 c. Onion chopped
1/4 c. green pepper chopped
1 c. diced ham
2 tbls soy sauce
2 c. cooked rice (can use brown if like I didn't)
1 egg beaten

In large skillet melt butter. Saute onion and green pepper until soft. Add remaining ingredients except egg. Cook over low heat 10 minutes, stirring frequently. Stir in egg and cook 2 or 3 minutes longer.
