Chicken Squares



Yesterday was my husband birthday. And tradition around here is that on your birthday you get to have whatever you want for your birthday dinner. Well, he wanted chicken squares. I don't make them that often because it just seems to take a lot of work for me. But once I bit into one they are heavenly. This recipe has a lot of different names chicken squares, chicken roll-ups, chicken fold-overs. What ever the name may be they all have about the same ingredients in them. You can serve the gravy part over rice or mashed potatoes. You will not see a post for his birthday cake. I cheated and bought one, because he loves carrot cake and I just can't make a good carrot cake. And I don't even like carrot cake so why would I learn how to make one. I know I am silly that way.

Chicken Squares
8 oz cream cheese soften
2 c. cubed, cooked chicken
1/4 tsp. salt
1/4 tsp. pepper
2 (8 oz) cans crescent rolls
2 Tbsp. milk
1 Tbsp. chopped onion
1 Tbsp. chopped celery
3 Tbsp. melted butter


Combine cream cheese, chicken, salt, pepper, milk, onions, and celery and stir together until well mixed. Separate crescent rolls and lay them out on a jelly roll pan and flatten each one out a little bit. Spoon 1/4 c. (or less) of the chicken mixture onto each triangle. Fold the crescent roll over the top of mix and pinch dough together so that no mixture is showing. Then melt the butter and brush on top of the each roll. Bake 350 degrees fro 15-18 minutes uncovered. You can half the recipe and only do one can of crescent rolls for 8 chicken squares instead of 16.


Chicken Gravy
1/2 c. water
1/2 c. milk
2 bouillon cubes
1 can of cream of chicken soup
salt and pepper

Measure water and milk in small saucepan and bring to a boil. Add bouillon and stir until dissolved. Stir in soup until smooth. Add salt and pepper to taste. You can double the recipe if you like a lot of gravy.

  2. Hey Suzette - I make these too. The only thing I do differently for the most part is take Pepperidge Farm's herb seasoned stuffing mix, blend it up so it is pretty fine, melt some butter, and then dip the chicken square into the butter and cover it with the crumbs from the stuffing. It is excellent. You'll have to give it a try and let me know what you think!

  3. My family has been making this maini dish for years! We call it chicken crockets. It is a huge hit! I do agree... they are a lot of work.. especially if you decide to roll them in bread crumbs.

This is a dish that I've had only like three times in my life, but I'm always craving it, because I had it in childhood but I've never been able to figure out what it was or how it was made. All I can remember is how it tastes and how much I love it. Thanks for the recipe. I will be making it this week! I'm so excited!
