Kassie Brownies


My cute niece Kassie came to live with us and she made us these really good brownies.  They are kind of cake like in a way but also brownie like too. really good!

Kassie Brownies
1 c. butter, melted
5 Tbsp. coco
2 c. sugar
1 tsp. vanilla
4 eggs
1/4 tsp. salt
1/4 tsp. baking powder
1 1/2 c. flour

Combine butter, coco, sugar and mix.  Then add vanilla and mix.  Then add eggs and mix.  Then add salt, baking powder, and flour and mix good.  Then pour into a greased 9x13 pan.  Bake at 350 degrees for 35-45 minutes.

*You can double recipe and put into a greased cookie sheet. Pin It

Cheesy Tortellini Spinach Bake


Cheesy Tortellini Spinach Bake
1 pkg. cheese Totellini
4 oz. bacon, cut in cubes
3 cloves garlic, minced
2 Tbls. flour
2 c. milk
3/4 tsp. salt
1/8 tsp. pepper
1 1/2 tsp. basil
1 medium lemon
2 c. roughly chopped fresh spinach
3/4 c. grated mozzarella cheese, divided
3/4 c. grated Parmesan cheese, divided

Preheat oven to 350 degrees. Fill a large stockpot with water and bring to a boil.  Add tortellini and cook according to package directions.  Cook bacon in skillet until crisp. Reserve 2 Tbls of drippings in pan and drain the rest.  Add garlic to bacon grease and cook 1 minute. Slowly add milk and continue to whisk until smooth. Add salt and pepper, basil and bring to sauce to a simmer. 

While sauce is heating, zest a lemon and juice from it. Add 2 tsp. of zest and 2 Tbls. lemon juice to sauce. Continue to stir until thickened 2-3 minutes. Remove from heat.

Drain tortellini and return to stockpot.  Reserve 1 Tbls. cooked bacon and add the rest to pasta mixture. Add spinach, 1/2 c. mozzarella cheese and 1/2 c . Parmesan cheese.  Add sauce and gently stir to combine. Place pasta mixture in a 9x9 pan and top with remaining cheese and bacon.

Cover pan with foil and bake 20 minutes. Remove foil and bake an additional 5-10 minutes. Remove from oven and cool 10 minutes before serving.

Cheesy Garlic and Chive Potatoes



Cheesy Garlic and Chive Potatoes

2 pounds baking potatoes
1 1/2 c. sour cream
1/4 c. freshly chopped chives
3 cloves garlic, pressed
2 Tbls. grated onion
1 1/2 tsp. salt
1/4 tsp. pepper
1 1/4 c. cheddar cheese, divided
1 1/4 c. Swiss cheese, divided

Cook potatoes in oven at 425 after you have washed and pierced with a fork a few times. Cook in oven for 1 hour. Remove from oven and cool completely.  Then turn down heat to 350 degrees. Grated potatoes with skins on. Combine in a bowl sour cream, chives, garlic, onion, salt and pepper.  Add potatoes and gently toss to combine.  Add 1 cup of cheddar cheese and 1 cup of Swiss Cheese fold in to combine.  Place mixture in a baking dish 8x8. Sprinkle remaining cheese.  Bake 30-40 minutes.  Cool 10 minutes before serving. Pin It

Glazed Lemon Cake


Glazed Lemon Cake
1 bx yellow cake mix
1 bx lemon instant pudding
3/4 c. milk
3/4 c. veg. oil
4 eggs
6 Tbls. real butter, melted
6 Tbls. fresh lemon juice
3 c. powdered sugar
whipped topping homemade

Preheat oven to 350 degree. Spray a 9x13 pan with nonstick cooking spray. Combine dry cake mix, and dry pudding, milk, oil, and eggs.  Beat for 2 minutes.  Pour into cake pan 9x13 and bake according to cake mix box instructions for time for a 9x13 size cake.  When cake is almost finished baking, combine melted butter, lemon juice, and powdered sugar and whisk until smooth  When cake is baked, use a skewer or large fork to poke holes all over hot cake. Pour glaze over cake and let soak into holes. Let cake cool to room temperature, or chill if desired.  Right before serving spread whipping cream over top and serve.

Lemon Chicken Pasta


Lemon Chicken Pasta
1 pound chicken breasts
2 Tbsp olive oil
1/2 cup diced yellow onion
1 Tbsp minced garlic
8 oz (about 2 1/2 cups) small, dry pasta
1 cup grape tomatoes, halved
2 cups chicken broth
Juice from one large or two small lemons
1 cup water
1 tsp dried basil
1 tsp salt
1/2 tsp pepper
1 cup shredded Mozzerella

 Heat olive oil in a large skillet over medium-high heat. Add onion and stir, cooking until soft and nearly translucent. Stir in garlic and cook for 30 seconds. Add chicken and cook until just browned. Stir in the pasta, tomatoes, chicken broth, lemon juice, water, basil,  salt and pepper. Bring to a boil and continue to stir often, uncovered, for about nine minutes, or until most of the liquid has evaporated. Remove from heat, sprinkle cheese on top, and cover for ten minutes or until cheese is melted and remaining liquid is absorbed.

Zucchini



Zucchini
 Flour
 egg beaten with a little milk
 Butter
1 or 2 zucchini
seasoning

Cut Zucchini in slices.  In skillet heat melt the butter.  Then dip zucchini in egg/milk mixture and then coat with flour.  Put in pan and sprinkle seasoning on your choice.  Cook for 5 minutes and then turn over and coat with more seasoning. Then cover and cook until tender and done.

BBQ Pork Ribs


I made this recipe up one time and it turned out super good. 

BBQ Pork Ribs
BBQ Sauce (we like Sweet Baby Rays)
Pork Ribs
Oil 
Salt and Pepper

Put some tin foil down on the grill and pour some olive oil over it. Then put Ribs on top of tin foil. Sprinkle with Salt and pepper. And then pour BBQ sauce on them.  Cook for 10 mins. Then turn and coat with salt and pepper and BBQ sauce again. Cook for another 10 mins.  Then turn again and baste with sauce and continue cooking until done.
